We hope you had a wonderful Thanksgiving filled with family, friends and great food. As you recover from the festivities here are a few ideas to help you use up those leftovers.
Carolyn, our COO, is an incredible hostess. Her advice? Use up all your leftovers in one Thanksgiving Frittata. Here is her recipe.
Spray the pan with cooking spray.
Spread the mash potatoes over the bottom and even up the sides.
Layer stuffing on top.
If you had another vegetable or green bean casserole… you could add it on top of stuffing.
Sprinkle on cheese.
Next combine eggs with a little milk – whip until frothy.
Pour the egg mixture over all the ingredients, poking holes to ensure that the eggs make it through all the ingredients.
Arrange sliced tomatoes or green onions on top in a decorative manner.
Bake at 350 until golden brown and you can slice with a knife – depending on size 30-40 minutes.
This one is easy! Add a spoon full our two of leftover whole cranberries sauce to your greek yogurt with a sprinkle of granola. Yum!

Leftover Cranberry Sauce Muffins from Two Peas and Their Pod. These are simple and delicious. My family loves them warm, right out of the oven, with a cup of tea.
Sweet Potato Burrito. The sweet potatoes I make on Turkey Day are flavored with roasted jalapenos peppers and maple syrup. The jalapenos give them a little kick so the leftovers make a great vegetarian burrito. Just pile leftover sweet potato mash, black beans, spinach and shredded cheese onto a large tortilla, fold and warm through. Serve with a dollop of sour cream and your favorite salsa.
